This spicy lamb curry, featuring coconut milk, is excellent used also with beef, goat or chicken.

This 1 kg jar will cook with approximately 40kg of meat, vegetables or seafood – 200 servings.

Ingredients

Paprika, Chilli Powder, Coriander Seed, Cumin Seed, Turmeric, Black Pepper, Fenugreek Seed

Recipe

Ingredients:

  • 3 tbsp butter/ghee
  • 2 medium onions, finely chopped
  • 6 cloves garlic, finely chopped (6 tsp minced garlic)
  • 5 tsp ginger, finely chopped
  • 2 tbsp Agra Lamb & Coconut Curry Masala
  • 1 kg (2.2 lb) lean lamb, diced
  • 300 ml s (10oz) coconut cream
  • 1 cup chopped tomatoes
  • 1½ tsp salt or to taste

Method:

Melt the butter/ghee and add the onion, garlic and ginger. Sauté until the onion is soft. Lower heat, add the Agra Lamb & Coconut Curry Masala, mix well, frying until aromatic. If the mixture is too dry, add a small amount of water to enable the spice to fry. Turn up the heat, add the lamb and seal well. Add the coconut milk and tomatoes. Bring to the boil and cover pan reducing heat to low and simmer until lamb is cooked and tender. Adjust the amount of liquid to the preferred consistency by simmering the curry with the lid off until the gravy thickens. This curry is best used for lamb, beef or chicken and potato or sweet potato (for best results do not use for seafood, lentils or just vegetables).

Butter Chicken Curry Masala Mild (Kumari recipe)

Please note that this is a Kumari Spice World original blend and IS NOT the same product as the famous Mudgeeraba Spices original blend.

Ingredients: Cardamom, Clove, Pepper, Ginger, Paprika, Coriander, Fennel, Nutmeg & Cinnamon

 

Recipe:

You’ll need:

  • garlic minced
  • ginger minced
  • Finely chopped onion
  • tomato puree
  • cream or sour cream

Saute Garlic/Ginger paste for 1 min
using half the butter, in an indian
work/heavy fry pan. Add chicken
fry until golden. Remove from pan,
set aside. Heat the remaining butter,
Add tomato puree, butter chicken mix
& Salt. Stir well for 1 min.Do Not Burn.
Add enough water to keep gravy
thick, Bring to boil quickly. Reduce heat,
Add Chicken stiring gently,
Add 1/2 cup cream
Simmer for 10mins….

For a Creamier result use all the Cream, but
increase Butter Chicken mix by approx 1/4 Tsp.

How to use:

To make amazing Satay Sauce, simply add 5 tbsp (100g) of Sambal Kachang Satay Sauce Paste to 200ml of Coconut Cream and 1tbsp (20ml) of Soy Sauce. Bring to the boil, stir well to combine, then it’s ready to serve.

For a creamier texture, blend slightly after boiling – just enough to still leave chunky peanuts in the sauce.

For a milder heat, add an extra 50ml of Coconut Cream to the above recipe.

Alternatively, add 1 tbsp of Sambal Kachang Satay Sauce Paste (or to taste) to any stir fry.
