Rogan Josh, also written as roghan josh or roghan ghosht, is an aromatic curried meat dish of Persian or Kashmiri origin.

It is made with red meat, traditionally lamb or goat in a rich spicy yoghurt sauce and is one of the signature recipes of Kashmiri cuisine.

This 250g jar will cook with approximately 8kg of meat, vegetables or seafood – 40 servings.

Ingredients

Coriander Seed, Paprika, Chilli Powder, Turmeric, Black Pepper, Cinnamon, Cloves, Green Cardamom Seed

Recipe

Ingredients:

  • 4 tbsp butter/ghee
  • 2 tbsp ginger, julienned (5 tsp minced ginger)
  • 2 tbsp green chilli or capsicum, finely chopped
  • 2 tbsp fresh coriander, finely chopped
  • 3 tbsp Rogan Josh Curry Masala
  • 1 kg (2.2 lb) lamb, diced
  • 1 cup Greek style yoghurt
  • salt to taste
  • fresh coriander, chopped, to garnish

Method:

In a saucepan melt the ghee, add ginger, green chilli/capsicum and fresh coriander and fry until golden. Lower heat, add the Rogan Josh Curry Masala, mix well, frying until aromatic. Turn up the heat, add the lamb and fry until browned. Add the yoghurt and bring to the boil, turn down to simmer and cook covered until the meat is tender. Salt to taste. Garnish with the fresh chopped coriander.
