Ingredients for the way we make it at shows

  • 1 whole chicken, boiled and shredded
  • 1 kg mixed frozen vegetables from the supermarket (you can choose and chop your own, if you like)
  • 28g Butter Chicken Curry Masala
  • 200g Coconut milk powder
  • 24g Garlic powder
  • 3g Ginger powder
  • 75g Onion powder
  • 24g Salt
  • 5g Tandoori Colour
  • 600g Sour cream
  • 200g Tomato paste

Method:

Modern Recipe Method

Melt the butter and add the onion, garlic and ginger. Sauté until the onion is soft. Lower heat, add the Butter Chicken Curry Masala, mix well, frying until aromatic. If the mixture is too dry, add a small amount of water to enable the spice to fry. Add the chicken and seal well. Add the remaining ingredients. Cook until the chicken is tender and reduce the gravy with the lid off until thick.

Traditional Recipe Method

Melt the butter; add the chillies, ginger and coriander. Sauté for a few minutes on medium heat, add the Butter Chicken Curry Masala, mix well, frying until aromatic. If the mixture is too dry, add a small amount of water to enable the spice to fry. Add the pureed onion and garlic and cook until mixture is well mixed, add the chicken and seal well, and then add the remaining ingredients. Cook until done and salt to taste. To thicken the gravy, simmer with the lid off until reaching the desired consistency. Garnish and serve hot with naan bread or rice and tomato chutney.

Method for the way we cook it at shows

We cook this in a rice cooker but you could use a pan (we advise you do not use a slow cooker as this could overcook the chicken).

Prepare chicken by boiling in a pot until cooked, remove all skin and bones whilst shredding all the meat into a new bowl. Keep 400ml of broth.

In the rice cooker, add 750g of shredded chicken, 400ml chicken broth, the frozen vegetables and tomato paste. Bring to a boil.

Once boiling, add all other dry ingredients. Mix well.

Stir in sour cream, heat thoroughly.

Enjoy.

The Mudgeeraba Butter Chicken mix is the best curry mix I have ever had. I made a lot of my own blends but can’t beat this one. My children and friends love it. I add 1 kg chicken and same in vegetables and play around with the coconut cream/milk ratios and its always a winner.

Love this. I use olive oil instead of ghee or butter and replace the sour cream with Chobani low fat Greek yoghurt and it’s still delicious.

i HAVE ALMOST FINISHED THE BUTTER CHICKEN CURRY WE PURCHASED WHEN VISITING THE Canberra flower show some two years ago, & it was so good I have just purchased anothe plus a green curry chicken & a Massaman curry for good measure. If they all are as good as the butter chicken, I & our friends will be very happy. thank you.

  24. Sue (verified owner)

My favourite Mudgeeraba spice! Tried many of your other blends, but keep going back to the old favourite butter chicken. Also bought the tandoori colouring so it looks just like the samples you see at Floriade. Must be my 4th jar now, normally buy at the Floriade in Canberra, but ordered on line this time. Quick delivery time.

  25. Tricia (verified owner)

The best butter chicken spice mix we have ever tasted – this is our fourth jar. Can easily adapt the recipe to use lower fat options (coconut milk instead of cream and low fat yoghurt instead of sour cream) and it is still delicious! Ordering and delivery process very quick. Thank you.

    • Flavour & Spice (store manager)

You’ve made our day Tricia! Thanks for the great feedback and we’re happy to hear your recipe changes are working perfectly. We’d love to share your idea to others who’d like a low fat option as well. Thanks so much!

  35. Christine Falwasser (verified owner)

  36. Paul S (verified owner)

Been using this for a couple of years now, and it is great! Thanks!

  37. James

The best butter chicken meal we have ever had.
The blend as the back-of-pack recipe is fantastic. The instructions were straightforward and all of the measurements for creams and pastes were the same as the packet sizes available at the supermarkets (in Australia). This made purchasing the other ingredients dead simple, and no need to figure out what to do with extra quantities of ingredients in the fridge.

Now to try all of the other masala blends!

  38. Scott (verified owner)

Tried the butter chicken blend for the first time after years of using other Mudgerreba Spice products and this one was an instant hit with the entire family. Once you use these products you will never go ack to the run pf the mill generic supermarket packets

  39. David (verified owner)

Butter chicken is my wife’s favourite curry dish, and this marsala blend is absolutely perect for her level of tolerance (which is in the mild range). I like hot curries, but the flavour here is intense anough to take me to my happy place.

  40. Hayley

Bought this when I stumbled on them at the Canberra Floriade festival (the free tasting got me) and I love it!!! I love that it makes so many meals from one jar. We are currently travelling so I can’t carry lots of spices so one jar of this will last forever, and beats any jar or pre-mixed butter chicken by FAR. I’ll be back to buy more in different curries for sure!

Mexicana Taco Seasoning

It’s also perfect for mouth-watering burritos, enchiladas, tostadas, etc, or get creative and add a bit of Mexico to anything.  No fake stuff, just pure herbs and spices!

How to use your seasoning/rub and glaze:

Lightly or generously coat your meat with your seasoning/rub. Up to you based on how much flavour you prefer.

When cooking meat, either on the BBQ, in an oven or a smoker, generously pour glaze over uncooked meat in a dish and with clean hands, turn the meat over to ensure that it is liberally coated on all sides.

For the oven and smoker, cover the meat and cook following the usual cooking instructions. Uncover for the last quarter of the cooking time to allow the sauce to reduce and the sweet stickiness to develop. Re-coat now to personal preference, if required.

On the Barbecue, just cook on the plate or over the grill. The glaze will darken and look burned but that’s okay – and awesome.

Sambal Goreng (Ikan Bilis) Malay Chilli Paste Hot (400g)

Sambal is a sauce made from chilies, spices, herbs, and aromatics. It is a popular condiment in Malaysia, Indonesia, and Singapore. Sambal has a complex flavour that is all at once earthy, spicy and hot.

Sambals can be eaten with almost anything – noodle dishes, grilled meats, fish, burgers, pizza or as a substitution for chilli sauce in your favourite chicken wings recipe. Anywhere you use chilli sauce or a spicy dip, replace it with sambal for an instant upgrade. With a basic sambal base, you can mix and match ingredients to create whatever flavours you like.

Sambal goes just as well with noodles such as Mee Goreng (fried noodles) or Nasi Goreng (fried rice). It can also be served with Roti Canai (Malaysian flat bread).

Dishes aren’t complete unless they’ve a hearty dollop of this versatile condiment.
