RECIPE
Ingredients:
- 1 whole chicken (about 1.5 kg) or 1 kg chicken pieces
- 2 tbsp olive oil
- 2 tbsp Baharat spice mix
- 1 tsp sea salt
- ½ tsp black pepper
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tbsp honey (optional, for caramelised skin)
Method:
1️⃣ Preheat oven to 200°C (fan-forced).
2️⃣ In a small bowl, mix Baharat, salt, pepper, olive oil, lemon juice, and garlic. Add honey if you want a sweeter glaze.
3️⃣ Rub the mixture all over the chicken, getting under the skin for maximum flavour.
4️⃣ Roast for 50–60 minutes, basting halfway through, until golden and juices run clear.
5️⃣ Rest for 10 minutes before carving.
