Jambalaya Creole Seasoning was made for the pot. The herbal complexity of thyme, oregano, and bay leaf, the heat of cayenne, and the sweet depth of tomato and paprika all come together magnificently in slow-cooked, bubbling one-pot dishes.

  • Classic jambalaya — The definitive application. Brown chicken thighs and andouille sausage, build your Creole base of onion, capsicum, and celery, bloom the seasoning in the fat, then add rice, tomatoes, and stock. Cook until the rice absorbs every drop of flavour. Finish with prawns stirred through in the final few minutes.
  • Shrimp étouffée — Build a rich, buttery roux, add the Creole trinity with a generous tablespoon of the seasoning, and simmer until thickened. Add prawns and cook until just pink. Serve over steamed rice with a scattering of parsley. Pure Louisiana comfort.
  • Red beans & rice — Simmer kidney beans low and slow with smoked sausage, the Creole trinity, and the seasoning until the beans are silky and the broth is thick and deeply spiced. A Monday tradition in New Orleans and one of the great simple dishes of American cooking.

Meat & Protein – Beyond the pot

  • Blackened chicken — Press the seasoning firmly into chicken breasts or thighs and cook in a screaming-hot cast iron pan with a little butter. The paprika, cayenne, and garlic form a deeply charred, intensely flavoured crust that is the hallmark of Louisiana blackened cooking.
  • Blackened fish — Coat fillets of barramundi, snapper, or salmon generously and cook in a hot pan with butter for 2–3 minutes per side. The herbs and paprika create a crust that locks in the moisture beautifully. Serve with a wedge of lemon and a cold beer.
  • Creole grilled prawns — Toss large prawns in the seasoning with olive oil and grill in the shell for 2–3 minutes per side. The shells trap the seasoning’s flavour against the flesh as it cooks. Serve with crusty bread to soak up the juices.
  • Spiced pork chops — Rub thick-cut pork chops generously and leave for at least 30 minutes. Grill or pan-sear until caramelised and just cooked through. The mustard and thyme in the blend pair particularly beautifully with pork.

  • Creole roasted vegetables — Toss capsicum, zucchini, red onion, and corn kernels with the seasoning and olive oil. Roast at 210°C until caramelised and slightly charred. The tomato and herb notes in the blend create a deeply satisfying, smoky result.
