The churrasco tradition, where skewered meats are slow-roasted over live coals by the churrasceiro and carved directly at the table, is one of the great eating experiences on earth. At the heart of it all is the rub — a simple, honest seasoning that lets the quality of the meat shine while adding layers of smoky, sweet, and savoury depth.

THE GRILL — MEAT & PROTEIN – Where this rub was born to be
The Brazilian BBQ Rub was made for fire. The sugar caramelises, the paprika deepens, the garlic and onion mellow into something rich and sweet, and the mustard seed crackles with a subtle sharpness. Every cut of meat is better for it.
• Picanha (rump cap) — The king of the Brazilian churrasco. Score the fat cap, rub generously all over, and cook fat-side down on the grill first to render. The fat carries the rub’s flavours deep into the meat. Rest and slice against the grain.
• Beef ribs — Coat short ribs or beef back ribs generously and leave overnight. Cook low and slow over indirect heat until the meat pulls from the bone, then finish over direct flame to caramelise the crust. The sugar and paprika create a bark that is nothing short of extraordinary.
• Chicken thighs & drumsticks — Rub under the skin and all over the outside. Grill over medium-high heat, turning regularly, until the skin is deeply charred and caramelised. The garlic, ginger, and paprika make this the best grilled chicken you’ll ever make.

• Whole butterflied lamb leg — Coat generously and leave overnight. Grill over direct heat until charred and caramelised on the outside and still pink in the centre. Rest for at least 15 minutes and carve at the table for a genuine showstopper.
• Whole prawns & grilled fish — Toss large prawns in the rub with a little olive oil and grill in the shell for 2–3 minutes per side. For fish, rub a whole barramundi or snapper and cook on a hot, oiled grill until the skin is crisp and smoky.

BEYOND THE BBQ — OVEN & PAN – No grill? No problem
The Brazilian BBQ Rub isn’t just for the backyard. The sugar caramelises brilliantly under a hot grill or in a screaming-hot cast iron pan, and a low oven draws out the same deep, smoky sweetness you get from the coals.
• Oven-roasted chicken — Rub a whole chicken inside and out and leave overnight. Roast at 200°C until the skin is deeply golden and caramelised. The garlic and onion in the rub perfume the whole bird as it cooks.
• Cast iron pan steak — Press the rub firmly into a thick-cut rump or sirloin. Get a cast iron pan screaming hot, add a knob of butter, and sear for 3–4 minutes per side. The sugar and paprika form an extraordinary crust. Rest before slicing.

The sugar, paprika, and ginger in this rub make it far more versatile than you might expect. These are the experiments that will raise eyebrows at the table — in the very best way.
• Spiced caramelised nuts — Toss cashews or almonds in melted butter and the rub, spread on a tray and roast at 180°C until golden and deeply caramelised. The sugar, pepper, and mustard seed create an addictive sweet-savoury crunch. A brilliant match for cold drinks at a summer barbecue.
