This medium heat South Indian curry is an old-time favourite. Traditionally cooked with chicken and coconut milk this versatile curry will also lend itself to most foods.
Also this curry can be cooked using any kind of liquid i.e. coconut milk, water, tomatoes, cream, yoghurt, sour cream etc.
Best used for cooking any kind of meat, seafood, vegetables or lentils.

Garam Masala is a blend of ground spices used extensively in Indian cuisine. It’s sometimes used on its own, but it can be mixed with other seasonings as well.
In northern Indian cuisine, Garam Masala is typically used in powder form, while in the southern part of the country, Garam Masala is often formed into a paste with coconut milk, vinegar or water.
We use our version of this traditional, key ingredient in several of our curry masalas.

The Chocolate Carolina Reaper is a variant of the infamous Carolina Reaper pepper, which is known for being one of the hottest peppers in the world. This particular variety, as its name suggests, has a rich, chocolate-colored hue, making it visually distinct from the more common red Carolina Reaper. It has a rich, intense heat with subtle fruity undertones. Upon the first bite, you’ll likely notice a slightly sweet, almost chocolate-like flavour, which quickly gives way to an overwhelming, fiery heat. The pepper’s heat is so extreme that it can cause a burning sensation that lasts for several minutes, accompanied by sweating, tears, and sometimes even hiccups. Its not for the weak.
It’s important to handle the Chocolate Carolina Reaper with care. If you’re brave enough to taste it, start with a very small amount and have plenty of dairy products on hand to help neutralize the heat. The Chocolate Carolina Reaper is an excellent addition to spicy sauces, salsas, and dishes for those who can handle its intense heat and appreciate its complex flavours.
Where does it sit on the scoville scale? The Chocolate Carolina Reaper typically ranges between 1.5 million and 2.2 million Scoville Heat Units (SHU). This places it at the extreme end of the heat spectrum, making it significantly hotter than more commonly known peppers like the habanero or the ghost pepper.

Za’atar (pronounced ZAH-tahr) is a spice blend that can be used in a multitude of ways and many Middle Eastern dishes wouldn’t be complete without Za’atar, it helps bring out the flavour of foods and its a modern and appealing addition to most savoury dishes.
While there are many variations originally going back to medieval times, its the perfect amount of each ingredient that gives it the desired flavours. Our recipe includes sumac which brings a citrus taste, thyme a earthy and minty flavour and roasted sesame seeds for a nutty and sweet flavour for a overall tangy and toasty essence.
Sprinkle it over salad, eggs, hummus, labneh, baba ghanoush or mix with olive oil for a flavourful marinade.
