Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia.

Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam.

Our version hails from the Malacca region in Malaysia.

Ingredients

Apple Cider Vinegar, Cayenne Chilli, Onion, Olive Oil, Water, Balachan, Lemon Grass, Sugar, Sea Salt, Shrimp (dried), Candle Nut, Galangal, Coriander, Turmeric

Recipe

Ingredients:

  • 1 can coconut milk
  • 1 cup of water
  • 2 tbsp Malacca Laksa Nyonya Noodle Soup Paste
  • Green prawns, shelled
  • Bean sprouts
  • Noodles (cooked & drained)

Method:

  1. Combine the coconut milk, water and Malacca Laksa Nyonya Noodle Soup Paste in a saucepan and bring to the boil. Add the green prawns and cook.
  2. To serve, place the noodles and bean sprouts in the bottom of a serving bowl and pour Malacca Laksa soup over the top.
  3. Garnish with fresh Vietnamese mint (optional).

Convenient Recipe

  1. Buy any brand of 2-minute noodles. Cook the noodles using coconut milk instead of water and add 1 tbsp Malacca Laksa Nyonya Noodle Soup Paste. Add the sprouts, prawns or any ingredients you like.
  2. Alternatively make a curry using Malacca Laksa Nyonya Noodle Soup Paste, cook with coconut milk and serve with noodles.

Bombay Curry Paste

This paste is created with fabulously popular Bombaywalla curry masala.  Same spices except with the time saving advantage of having ginger, onion and garlic already in the paste.  Bombaywalla means “Man from Bombay”.  This medium heat South Indian curry is an old-time favourite. Traditionally cooked with chicken and coconut milk this versatile curry will also lend itself to most foods.  This 280g jar will cook with approximately 6kg of meat, vegetables or seafood – 30 servings.

Durban Curry Paste

This is a curry with fantastic African influences. It is an unroasted, general purpose curry, excellent for vegetables, lamb, beef, chicken or fish.   What is Bunnychow?  Bunny chow is a South African fast food dish that originated in the Indian community of Durban. It consists of a hollowed-out loaf of bread filled with curry. The bread used is typically a white bread loaf, and the center is scooped out to make space for the curry filling, which can be made with various ingredients such as chicken, beef or veggies. provides 30 servings.

Madras Curry Paste

This medium heat South Indian curry is an old-time favourite. Traditionally cooked with chicken and coconut milk this versatile curry will also lend itself to most foods.  Also this curry can be cooked using any kind of liquid i.e. coconut milk, water, tomatoes, cream, yoghurt, sour cream etc. Provides 30 servings.

Lamb Korma Paste

Aussie All-Rounder Barbecue Rub (175g)

Weird tips!!

Why do some people put a thumbprint in their burger patty?  Making a thumbprint provides a natural divot which helps the Patty cook more evenly and prevents it from bulging too much in the centre.

Why put a ice cube on your beef burger?  The ice cube will prevent overcooking and add extra moisture — especially helpful if you’re grilling large patties.  What you’re gonna do is take a ball of ground beef, gently press a little ice cube in the centre, and form the beef around it so it’s sealed.
