Za’atar (pronounced ZAH-tahr) is a spice blend that can be used in a multitude of ways and many Middle Eastern dishes wouldn’t be complete without Za’atar, it helps bring out the flavour of foods and its a modern and appealing addition to most savoury dishes.
While there are many variations originally going back to medieval times, its the perfect amount of each ingredient that gives it the desired flavours. Our recipe includes sumac which brings a citrus taste, thyme a earthy and minty flavour and roasted sesame seeds for a nutty and sweet flavour for a overall tangy and toasty essence.
Sprinkle it over salad, eggs, hummus, labneh, baba ghanoush or mix with olive oil for a flavourful marinade. This classic blend, with the famous Kumari twist, is also a perfect rub for chicken, beef, lamb or fish and a seasoning for veggies, serve with crusty bread, dips (Mix with yoghurt for a quick dip or condiment).

Habanero BBQ Sauce has a smoky, sweet flavour which combines beautifully with the great taste of the Red Habanero chilli. It is a perfect fusion of four sauces: Ketchup, BBQ, Chilli and Mustard.
Made popular with Mexican cooking, the Habanero chilli comes from the Amazonas region and its flavour and aroma have become increasingly popular all over the world.
With fresh tomato, garlic and onion, this sauce combines the sweet smoke flavours of molasses and Worcestershire to create a velvety smooth sauce that goes perfectly on anything off the BBQ.
Chilli Teja Whole Very Hot (25g) is for the heat enthusiasts, offering an intense level of spice that can transform any dish into a fiery delight. These whole chilies are perfect for daring cooks looking to add a potent heat to their culinary creations.
This is a Tandoori spice blend that is made into a marinade with some yoghurt, oil, lemon juice, ginger and garlic paste, and pinch of salt.
Marinate some chicken and BBQ or cook under the grill. Excellent served with rice, Naan bread, raita, chutney and kachumbar (Indian salad).
Another way to use this is as a delicious, more spicy version of our Butter Chicken Curry. Simply use this spice blend and follow the Butter Chicken Recipe.
Chilli Long Whole Mild (25g) are perfect for infusing dishes with a subtle heat and a hint of chili flavour without dominating the dish. These whole chilies can be added to curries, soups, and stews, imparting a mild spiciness and an attractive appearance.

Pair smoked paprika with meat or roasted vegetables, also use with a blend of other spices to make your own meat rub for a Sunday BBQ. Smoked paprika was used more commonly in paella dishes with sausages but used far more frequently now. Careful not to overcook paprika as it can easily burn, just enough to unlock its fragrant and smoky flavours is best.
Dill Tips (13g) offer a delicate version of the herb’s signature taste. These finely chopped tips are perfect for adding a fresh, green note to seafood, salads, and dips, providing a lighter alternative to the seed.
This spicy South Indian curry, traditionally used for pork, features a creamy coconut milk and tamarind sauce and is excellent used with lamb, beef or chicken.

Aniseed powder is a spice made from the ground seeds of the anise plant. It has a licorice-like flavor and is commonly used in cooking and baking. It can be used to flavour desserts, such as cookies and cakes, as well as savoury dishes like soups, stews, and sauces. It is also used in some alcoholic beverages, such as absinthe and ouzo. Aniseed powder is believed to have some health benefits, including aiding digestion and relieving coughs and colds.
Inspired by the flavours of the Mediterranean, Kumari’s Mediterranean Magic is a zesty blend of Rosemary, Lemon, Black Pepper and Chilli, a perfect rub or seasoning.
With this combination of herbs and spices you can expect woodsy aromatics with notes of evergreen, citrus, pepper, mint and floral, the flavours will bring your food to life with a sharp, earthy, citrus fresh and somewhat minty flavour with a hint of chilli.
It all balances together perfectly for most savoury dishes that include roast veggies, grilled or baked chicken and fish, add to soups and stews for some extra oomph!

Can be used as a rub!
Tip: A good rub has sugar and salt to amplify the flavours and allows the rub to penetrate the meat better, the sugar helps with crust formation and browning. It will also balance any bitterness.
