Ingredients
- 2 cup frozen peas, defrosted (you could switch part of the peas for defrosted or fresh broccoli broken into smaller pieces)
- 1 clove garlic
- 1 tsp salt
- 1/2 tsp Curry powder of your choice (Lamb & Cashew blend is good for this, delicate flavour and no chilli)
- 2 eggs
- 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1 tsp lemon zest (optional)
- 1 tbs fresh mint (optional)
- 2 tbs olive oil, for frying
Method
- Blend half of your green veg with the sliced clove of garlic, the salt, and the eggs.
- Add the flour and baking powder, along with the lemon zest, mint, curry powder and a crack of pepper if desired, and stir to combine.
- Fold in the remaining half of your green veg
- Heat 2 Tbsp olive oil in a frying pan over medium heat and fry the fritters in batches.
- You can make them whatever size you want, although a heaped soup spoon makes around 8-10 fritters.
