2 tablespoons Malacca Laksa Nyonya Noodle Soup Paste – Hot
6-8 large green prawns, shelled and prepped
1 cup water
400g coconut milk
Noodles of your choice, cooked and drained
To Serve:
1 bunch bok choy, trimmed and washed
Handful snow peas, trimmed and sliced thinly
Fried shallots
Sliced red chilli
Fresh mint leaves
Fresh lime
Method
- Add the Malacca Laksa Nyonya Noodle Soup Paste to a medium sized saucepan over a high
heat. Stir for a few minutes. - Add the water and coconut milk and stir until combined.
- Add the prawns and reduce the heat to a low – medium simmer. Simmer for around 5 minutes or
until the prawns are red / pink in colour and the meat is opaque white and no longer translucent.- In 2 serving bowls, add the cooked noodles and top with the laksa soup and prawns.
Serve with bok choy, sliced snow peas, fried shallots, red chilli, mint leaves and a squeeze of
fresh lime juice.
