There are 2 main types of turmeric, Madras which is this one, is the more commonly one used for cooking and has a curcumin value of around 3.5%. The other variety is Alleppey and has a higher curcumin level of around 5-6% and is mostly used for the medicinal benefits. Best used with black pepper, which contains piperine. Piperine is a natural substance that enhances the absorption of curcumin by 2,000%.
Madras is used in curries, stews, focaccias, soups and can even be added to eggs.
Aniseed is commonly used as a flavouring agent in various culinary dishes, such as bread, pastries, and beverages. It is also used in the production of liqueurs and spirits, including the famous French liqueur, absinthe. Aniseed has been used in traditional medicine for its potential therapeutic properties, such as aiding digestion and reducing inflammation. In addition, aniseed oil is used in aromatherapy to promote relaxation and relieve stress.
According to Hindu mythology, Saffron (or Kesariya) is the color of Sunset (Sandhya) and Fire (Agni) which symbolises sacrifice, light, and quest of salvation. The colour is worn by Hindu saints and ascetics as their devotion toward the religion.
Saffron colour is widely used as a natural food additive for colouring and flavouring of foods, especially popular in making Indian yellow rice.
