Malacca Thai Laksa Nyonya Noodle Soup Recipe

Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia. Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam. Our version hails from the Malacca region in Malaysia.

Ingredients

Total Time: 15-20 minutes Cook Time: 10-15 minutes Prep Time: 5 minutes Makes: 2 servesIngredients:2 tablespoons Malacca Laksa Nyonya Noodle Soup Paste - Hot 6-8 large green prawns, shelled and prepped 1 cup water 400g coconut milk Noodles of your choice, cooked and drainedTo Serve:1 bunch bok choy, trimmed and washed Handful snow peas, trimmed and sliced thinly Fried shallots Sliced red chilli Fresh mint leaves Fresh lime

Method

Add the Malacca Laksa Nyonya Noodle Soup Paste to a medium sized saucepan over a high heat. Stir for a few minutes. Add the water and coconut milk and stir until combined. Add the prawns and reduce the heat to a low - medium simmer. Simmer for around 5 minutes or until the prawns are red / pink in colour and the meat is opaque white and no longer translucent. In 2 serving bowls, add the cooked noodles and top with the laksa curry sauce and prawns. Serve with bok choy, sliced snow peas, fried shallots, red chilli, mint leaves and a squeeze of fresh lime juice.
