Masala chai – also known as ‘chai’, or ‘chai tea’ – is a traditional tea from India containing a mixture of warming aromatic herbs and spices mixed with black tea and milk. It’s known for preventing colds and also beneficial for warming the system when you do have a cold, making it the perfect hot drink during wintertime.

Black cardamom is great for typically more bland dishes like lentils. It elevates lentils and rice dishes in a subtle way without being over the top. Slightly fry them to release the aromas into your dish and remove before serving. With a sharp aroma and almost menthol flavour this does well balanced with sweet and spicy additions such as cinnamon, peppercorns or chillies.

Garam Masala is a blend of ground spices used extensively in Indian cuisine. It’s sometimes used on its own, but it can be mixed with other seasonings as well.
In northern Indian cuisine, Garam Masala is typically used in powder form, while in the southern part of the country, Garam Masala is often formed into a paste with coconut milk, vinegar or water.
We use our version of this traditional, key ingredient in several of our curry masalas.
This medium heat South Indian curry is an old-time favourite. Traditionally cooked with chicken and coconut milk this versatile curry will also lend itself to most foods.
Also this curry can be cooked using any kind of liquid i.e. coconut milk, water, tomatoes, cream, yoghurt, sour cream etc.
Best used for cooking any kind of meat, seafood, vegetables or lentils.
This 1 kg jar will cook with approximately 40kg of meat, vegetables or seafood – 200 servings.
This Ultra Hot chilli sauce is made with the Bubblegum 7 Pot chilli (a cross between the Moruga Scorpion and Yellow 7 Pot).
The Bubblegum chilli comes in at 850,000 SHUs and was created by Jon Harper. As the “Father” of this variety, and based in the UK, he has been growing this and a lot of other Hybrids for a number of years. Jon called it Bubblegum because he thought it had a taste of Bubblicious Bubblegum, while others say the name is because the chilli has a mixed colour stem and crown that looks like bubblegum.
All we can say is, good luck with picking the flavour of bubblegum – that’s a challenge for diehard chilliheads only.
Commonly used in Indian cooking, Black (also known as brown) are used either whole and toasted before using or ground for curry blends. Its a great addition to making pickles.
