Masala chai – also known as ‘chai’, or ‘chai tea’ – is a traditional tea from India containing a mixture of warming aromatic herbs and spices mixed with black tea and milk. It’s known for preventing colds and also beneficial for warming the system when you do have a cold, making it the perfect hot drink during wintertime.

Pink peppercorn is actually a berry from a Brazilian Pepper Tree, while not a true peppercorn its called one due to its similar size and shape like a black or white peppercorn. Its flavour is reminiscent of a little berry with a punch of heat inside. Lighter in pepper flavour, it goes nicely when mixed with white, black and green peppercorns for a good pepper-steak gravy. Also used for flavouring fish recipes, risotto, vinegars and even gin making.
Commonly used in Indian cooking, Black (also known as brown) are used either whole and toasted before using or ground for curry blends. Its a great addition to making pickles.

To make hors d’oeuvres use a savoury biscuit or corn chip with a dollop of sour cream and a tsp of chutney or a personal favourite is use as a sauce over a grilled chicken breast, fabulous!

Biryani, also known as biriyani, biriani, birani or briyani, is a mixed rice dish with its origins among the Muslims of the Indian subcontinent.
It can be compared to mixing a curry, later combining it with semi-cooked rice separately.
This dish is especially popular throughout the Indian subcontinent, as well as among the diaspora from the region.
