Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia.

Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam.

Our version hails from the Malacca region in Malaysia.

Ingredients

Apple Cider Vinegar, Cayenne Chilli, Onion, Olive Oil, Water, Balachan, Lemon Grass, Sugar, Sea Salt, Shrimp (dried), Candle Nut, Galangal, Coriander, Turmeric

Recipe

Ingredients:

  • 1 can coconut milk
  • 1 cup of water
  • 2 tbsp Malacca Laksa Nyonya Noodle Soup Paste
  • Green prawns, shelled
  • Bean sprouts
  • Noodles (cooked & drained)

Method:

  1. Combine the coconut milk, water and Malacca Laksa Nyonya Noodle Soup Paste in a saucepan and bring to the boil. Add the green prawns and cook.
  2. To serve, place the noodles and bean sprouts in the bottom of a serving bowl and pour Malacca Laksa soup over the top.
  3. Garnish with fresh Vietnamese mint (optional).

Convenient Recipe

  1. Buy any brand of 2-minute noodles. Cook the noodles using coconut milk instead of water and add 1 tbsp Malacca Laksa Nyonya Noodle Soup Paste. Add the sprouts, prawns or any ingredients you like.
  2. Alternatively make a curry using Malacca Laksa Nyonya Noodle Soup Paste, cook with coconut milk and serve with noodles.
