Ingredients

Coriander Seed, Cumin Seed, Fenugreek Seed, Turmeric, Chilli Powder, Green Cardamom Seed

Recipe

Ingredients:

  • 3½ tbsp butter/ghee (50 g)
  • 2 medium onions, finely chopped
  • 3 cloves garlic, finely chopped
  • 5 tbsp ginger, finely chopped
  • 2 tbsp Sri Lanka Chicken Curry Masala
  • 1 kg (2.2 lb) Chicken, diced
  • 1 tsp salt or to taste
  • 2 tbsp vinegar (optional)
  • 1 can of tomato (420g)
  • 1 tsp lemongrass/lemon rind
  • 1 cup coconut cream

Method:

Melt the butter and add the onion, garlic and ginger. Sauté until the onion is soft. Lower heat, add the Sri Lanka Chicken Curry Masala, mix well, frying until aromatic. If the mixture is too dry, add a small amount of water to enable the spice to fry. Turn up the heat, add the chicken and seal well. Add salt, vinegar, tomatoes, lemongrass and mix well. Add the coconut cream and bring to the boil. Cook simmering until the meat is tender and the liquid has reduced.

How to use:

To make amazing Satay Sauce, simply add 5 tbsp (100g) of Sambal Kachang Satay Sauce Paste to 200ml of Coconut Cream and 1tbsp (20ml) of Soy Sauce. Bring to the boil, stir well to combine, then it’s ready to serve.

For a creamier texture, blend slightly after boiling – just enough to still leave chunky peanuts in the sauce.

For a milder heat, add an extra 50ml of Coconut Cream to the above recipe.

Alternatively, add 1 tbsp of Sambal Kachang Satay Sauce Paste (or to taste) to any stir fry.

Weird tips!!

Why do some people put a thumbprint in their burger patty?  Making a thumbprint provides a natural divot which helps the Patty cook more evenly and prevents it from bulging too much in the centre.

Why put a ice cube on your beef burger?  The ice cube will prevent overcooking and add extra moisture — especially helpful if you’re grilling large patties.  What you’re gonna do is take a ball of ground beef, gently press a little ice cube in the centre, and form the beef around it so it’s sealed.
