Ingredients

Coriander Seed, Turmeric, Cumin Seed, Fenugreek Seed, Green Cardamom Seed, Chilli Powder, Black Pepper, Cinnamon, Fennel Seed, Caraway Seed, Cloves, Bay Leaves, Nutmeg

Recipe

Ingredients:

  • 4 tbsp butter/ghee (60 g)
  • 1 tsp mustard seed (optional)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tsp ginger, finely chopped
  • 1 chilli/capsicum sliced (optional)
  • 2 tbsp South Indian Vegetable Curry Masala
  • 1 kg (2.2 lb) mixed vegetables
  • 1 tsp salt or to taste
  • 1 cup coconut cream
  • 1 cup water or tin tomatoes

Method:

Melt the butter in a large saucepan. When hot, add the mustard seeds – these should start to pop straight away. Then add the onion, garlic, ginger and chilli. Sauté until the onion is soft. Lower heat, add the South Indian Vegetable Curry Masala, mix well, frying until aromatic. If the mixture is too dry, add a small amount of water to enable the spice to fry. Turn up the heat, add the vegetables and stir, mix in the salt, coconut cream, water or tomatoes. Cover and bring to the boil then simmer for 30 minutes or until the vegetables are cooked. Take the lid off and reduce the liquid until thick.

Suggested vegetable combinations: carrots, cauliflower, potatoes, sweet potatoes, eggplant, beans, tomatoes, pumpkin and peas.

This blend is excellent used with any meat, seafood, vegetables or lentils except for beef. You may also exchange the coconut cream and substitute with yoghurt, water, tomatoes, sour cream, cream or carnation milk, if desired.

This is an old favorite and recommended. Our family get through a lot of this.
I usually add 50 to 100% more than the recipe and also a sliced chilli fried up with the onions, garlic etc.
    Always better the next day.

I won’t be buying any other curry powder now that I have discovered the South Indian Vegetable Curry. The service provided is also refreshing. The Couriers were very busy at Christmastime and my parcel had not arrived. The staff at Mudgeeraba Spices kept onto this until such time as it was delivered. VERY IMPRESSIVE. Thanks.

Aussie All-Rounder Barbecue Rub (175g)

The beauty of Taipan’s Aussie All-Rounder is that it goes with all types of red meat on the grill, barbecue, in the smoker or oven. You’ll enjoy your meat with the salty-sweet and a little heat.

This is a great rub for brisket, apply your binder and then generously coat with Aussie All-Rounder prior to cooking in the smoker.

Tip:  Slow Cooker Brisket – Rub with generously with your rub and cook on high for 8 hours to give you a good shredded meat for tacos, sandwiches, burrito bowls or pasta.  6 hours cooking time will give you tender beefy slices for a roast dinner.

Made with all natural ingredients and None of the Nasties.

Weird tips!!

Why do some people put a thumbprint in their burger patty?  Making a thumbprint provides a natural divot which helps the Patty cook more evenly and prevents it from bulging too much in the centre.

Why put a ice cube on your beef burger?  The ice cube will prevent overcooking and add extra moisture — especially helpful if you’re grilling large patties.  What you’re gonna do is take a ball of ground beef, gently press a little ice cube in the centre, and form the beef around it so it’s sealed.
