Ingredients

Coriander Seed, Chilli Powder, Cumin Seed, Paprika, Nutmeg, Cinnamon, Fennel Seed, Green Cardamom Seed, Cloves, Black Pepper

Recipe

Ingredients:

  • 4 tbsp butter/ghee (60 g)
  • 2 onions, finely chopped
  • 5 cloves garlic, finely chopped (5 tsp garlic paste)
  • 3 tsp ginger, finely chopped (3 tsp ginger paste)
  • 4 green chillies, finely chopped
  • 1 cup water
  • 3½ tbsp Goa Lamb Curry Masala
  • 1 kg (2.2 lb) Lamb, diced
  • 2 cups water
  • 1 cup coconut cream
  • juice of 1 lime
  • salt to taste

Method:

Melt the butter and add the onion, garlic, ginger and chillies and fry until golden. Add 1 cup of water and cook until onion is mushy and all the liquids have absorbed. Lower heat, add the Goa Lamb Curry Masala, mix well, frying until aromatic. If the mixture is too dry, add a small amount of water to enable the spice to fry. Turn up the heat, add the lamb and seal well. Add 2 cups of water, bring to the boil, then cook simmering until the meat is tender and the liquid has reduced. Add the coconut cream and cook until the curry has reduced. Add the lime juice and salt to taste.

Reheat the curry before serving for a better tasting curry. This curry is best cooked with lamb, chicken or beef and potato or sweet potato.

Bubblegum BBQ Sauce has a smoky, sweet flavour which combines beautifully with the great taste of the Bubblegum 7 Pot chilli. It is a perfect fusion of four sauces: Ketchup, BBQ, Chilli and Mustard.

The Bubblegum chilli comes in at 850,000 SHUs and was created by Jon Harper. As the “Father” of this variety, and based in the UK, he has been growing this and a lot of other Hybrids for a number of years. Jon called it Bubblegum because he thought it had a taste of Bubblicious Bubblegum, while others say the name is because the chilli has a mixed colour stem and crown that looks like bubblegum.

With fresh tomato, garlic and onion, this sauce combines the sweet smoke flavours of molasses and Worcestershire to create a velvety smooth sauce that goes perfectly on anything off the BBQ.

Brazilian Barbecue Pork Rub (175g)

Taipan BBQ’s Brazilian Barbecue is a very popular rub that’s ideal for low’n’slow, particularly pork.  Use as a seasoning or rub for chicken, that’s a winner too!

Paprika brings a sweet pepper flavour and with the addition of other aromatic herbs and spices including pepper, garlic, and onion, finished with a final layer of ginger and mustard really pulls this flavour combo together for a perfect pork rub.  (try a slow cooked pork shoulder for pulled pork, 8 hours on high will give you the best result)

Tip: A good rub has sugar and salt to amplify the flavours and allows the rub to penetrate the meat better, the sugar helps with crust formation and browning. It will also balance any bitterness.

Made with all natural ingredients and None of the Nasties.
