Portuguese Peri Peri Barbecue Rub is a fiery blend of chili, garlic, and citrus, perfect for grilling. This rub brings the bold flavours of Portugal to chicken, seafood, and vegetables, offering a spicy kick that’s unmistakably peri peri.
Coriander Seed (Dhania) Whole (65g) can be toasted and ground fresh for a potent, lemony flavour that enhances Indian, Latin American, and Middle Eastern dishes. These whole seeds are perfect for those who enjoy the full, fresh flavour of coriander.
Garlic, related to onion, leeks and chives is widely used as flavouring in cooking and has also been known for its medicinal benefits throughout ancient and modern history.

Turmeric is a flowering plant, Curcuma longa, of the ginger family, Zingiberaceae, the rhizomes of which are used in cooking.
There are 2 main types of turmeric, Madras is the more commonly used for cooking and has a curcumin value of around 3.5%. The other variety is Alleppey (which is this one) and has a higher curcumin level of around 5-6% and is mostly used for the medicinal benefits. Best used with black pepper, which contains piperine. Piperine is a natural substance that enhances the absorption of curcumin by 2,000%.
Alleppey is used to make Golden Paste, Golden Milk and also used in health drinks like smoothies or teas. It can also be used in cooking.
Chilli Bird’s Eye Ground Extra Hot (55g) delivers an intense heat and a pungent flavour to dishes, making it ideal for those who love their food fiery. This ground chili can be used sparingly to spice up sauces, marinades, and stir-fries.
Mild and delicious, this chicken korma featuring cashew nuts, can be cooked with yoghurt or coconut cream.
Great also with lamb or beef, with vegetables and potatoes as well.

Cinnamon Verum Quills (Sri Lanka) are known for their delicate, sweet flavour, ideal for fine pastries and desserts. These quills, sourced from Sri Lanka, offer a more refined taste than cassia, enhancing dishes with their subtle, complex notes.
Mango sauce is a versatile and delicious condiment that can elevate various dishes, especially those featuring meat. Some popular dishes that pair well with mango sauce include grilled chicken, pork chops, shrimp, fish tacos, and even tofu. The sweet and tangy flavour of mango sauce adds a tropical twist to your meal, making it a refreshing and flavourful addition.
How to use a Glaze:
When cooking meat, either on the BBQ, in an oven or a smoker, generously pour glaze over uncooked meat in a dish and with clean hands, turn the meat over to ensure that it is liberally coated on all sides.
For the oven and smoker, cover the meat and cook following the usual cooking instructions. Uncover for the last quarter of the cooking time to allow the sauce to reduce and the sweet stickiness to develop. Re-coat now to personal preference, if required.
On the Barbecue, just cook on the plate or over the grill. The glaze will darken and look burned but that’s okay – and awesome. If making kebabs, thread the meat (and vegetables) through the skewer and brush the glaze over with a pastry brush, then pop them straight on the barbie!

I ordered the Chutney Box of 6 after tasting one of the chutneys at a friends place with lunch – so I got a bit exuberant and bought the chutneys and some curry powders. I have never cooked a curry in my life so it will interesting to see how it goes and which I end up liking. I have tried so far only 2 of the chutneys – the South Indian Lime (sweet but with a bitter note) and the Sri Lankan Mango (sweet and tangy). Tried both on ham and salad sandwiches – very tasty!
