Thyme Leaves are dried from the Thymus Vulgaris Shrub. The name “thyme” means “to fumigate” in Greek and most likely relates to the aroma that it generates from the burning of the herb in ancient Greek temples. Nowadays we commonly use thyme to flavour meats and marinades, its especially a common ingredient found in blended seasonings for lamb.
This popular South Indian hot beef curry is traditionally cooked with a hint of vinegar, this gives it that bit of familiar tang that comes with a vindaloo. For more intense flavour you can marinate your meat in the paste for at least 30mins or overnight is even better. A little tomato paste can be added but not necessary with this paste.
This curry paste is excellent used with beef, chicken, lamb or seafood.

Coconut Milk Powder (Dairy Free) provides the rich, creamy texture of coconut milk in a convenient powder form, perfect for tropical smoothies, curries, and baking, offering a dairy-free alternative that’s rich in flavour.
Basil Seed (Casacasa) Whole is known for its health benefits and ability to swell in liquids, creating a texture similar to chia seeds. Ideal for drinks and desserts, they add a refreshing, slightly peppery flavour.
A delicious chilli sauce with a unique flavour thanks to the Jamaican Yellow Scotch Bonnet. Blazing Saddles is such a tasty sauce. It’s hot, but not too hot ? more like a high-medium heat.
Yellow Scotch Bonnet chillies are pretty hot (200,000 Scoville Heat Units) and closely related to the Habanero. One of the defining features of this type of chilli is its sweet aroma and unique flavour. Rarely will you find a Jamaican cooking without some of this chilli and it’s the chilli of choice among Caribbean nationals.
Cloves (Lavang) Ground (20g) provide a potent, aromatic flavour that’s perfect for adding depth to sweet and savory dishes alike. This finely ground spice is ideal for baking, marinades, and spice blends, offering a warm, rich taste.
Licorice root is used as a flavouring in sweets, beverages and tobacco products. Popular with gin makers, it has a bittersweet, sugary, earthy taste that helps gin stand out.

I ordered the Chutney Box of 6 after tasting one of the chutneys at a friends place with lunch – so I got a bit exuberant and bought the chutneys and some curry powders. I have never cooked a curry in my life so it will interesting to see how it goes and which I end up liking. I have tried so far only 2 of the chutneys – the South Indian Lime (sweet but with a bitter note) and the Sri Lankan Mango (sweet and tangy). Tried both on ham and salad sandwiches – very tasty!
